- All beef is source-verified 100 percent Angus and tested to be BSE-free.
- When selecting seafood for the menu, Chef Fleming adheres to the Monterey Bay Seafood Watch program standards.
- Central 214 recycles all glass, paper, cardboard and aluminum and does not utilize styrofoam for any purpose. Menus are printed on recycled paper, and copy paper has been recycled as well.
- All of Central 214's excess cooking oils and grease are recycled into bio-diesel fuels.
